POTATO SALAD
Ingredients:
4 potatoes (1 potato per person)
4 scallions
4 mint sprigs
¼ deck of parsley
1 tablespoon of flaxseed oil
Preparation:
1. Wash and cook potatoes.
2. Chop all other ingredients.
3. Cut potatoes into cubes once cooked.
4. In a bowl put all the ingredients.
5. (Optional) You may add 2 tablespoons nonfat organic yogurt.
