Stuffed Onions
Ingredients:
4 ripe onions
1 cup quinoa.
2 cups diced mixed vegetables
1 onion, chopped
½ deck of cilantro
2 cups pico de gallo or salsa
Preparation:
1. Make a cut on the side of onions and careful not to tear the heart out leaving only 2 or 3 outer layers and grab a piece of the heart to put down where a hole is .
2. Cook the quinoa with 2 cups of water, vegetables , onion , garlic and half the cilantro.
3. Once cooked , fill the onions and place in an ovenproof meter for 30 minutes in the oven at 250 degrees Fahrenheit.
4. To serve, garnish with pico de gallo or salsa and remaining cilantro.
Note : You can also fill with cauliflower.
