Ingredients
3 large Beets
1 medium onion
1 grated carrot
3 cloves garlic
½ bunch cilantro
3 green lettuce leaves or purple ( for garnish)
The juice of one orange
Juice of one lemon
1 pinch of dill
2 tablespoons apple cider vinegar.
Preparation
1. Cook the beets.
2. Chop the onion and garlic , squeeze the lemon , put everything in a bowl and add the vinegar.
3. Peel the cooked beets and split them into squares or slices as you prefer. Add the orange juice.
4. To serve : Using a bowl or deep dish , arrange the lettuce on the edge of the plate and add the beets, then carrots , onion and finally the chopped cilantro.
