Eggplant Rolls

Eggplant Rolls

Ingredients:
1 Eggplant Broccoli 
3 Cloves of garlic
3 Green onions
2 Tablespoon chopped parsley
Sauce or yogurt to accompany

Preparation:

1. Slice eggplant lengthwise ( skinny ).
2. Put the raw broccoli in the food processor and then cook with a little bit of water over low heat.
3. Chop the onions and garlic and put them in ael perejil put them in a bowl .
4. Roast the eggplant and then put them on a plate and add a little bit of flax oil to each one.
5. When brocoli is ready remove the excess water and add the chopped ingredients.
6. Put some of the brocoli in each eggplant and make the rolls.
Serve with yogurt dressing and enjoy.
