ORANGE LENTILS

ORANGE LENTILS
Ingredients:
½ cup lentils soaked a day earlier.
½ cup quinoa
2 carrots chopped diced
1 chopped celery, diced
5 mint leaves, chopped
½ onion and ½ for sauce
4 chopped garlic, 2 for lentils and 2 for the sauce.
3 oranges (juice) and skin.
1 orange into wedges for garnish.
Mint leaves for garnish.
2 scallions

Preparation:
1. Cook lentils with carrots, celery, ½ onion, 2 garlic and 5 mint leaves for ½ hour over medium heat with 2 cups of water.
2. When the lentils are almost ready add the quinoa and cook just until smooth.
3. Put in a pan the remaining onions and garlic to caramelize, then add the orange juice.
4. When everything is cooked serve in the orange peel.
