Stuffed Acorn Squash
Ingredients:
2 Acorn Scuash
The juice of three oranges
1 handful of raisins
1 green apple
½ teaspoon turmeric
1 pinch of marjoram
½ green cabbage
2 grated carrots
2 onions julienned
Preparation:
1. Cut the squash in half crosswise and remove seeds.
2. Place 1/3 of orange juice in a saucepan and place the pumpkin upside down so they are sewn with the juice over low heat for 40 minutes or until tender.
3. In another pot put the rest of the orange juice and add the onion, finely chopped cabbage, raisins and herbs. Let cook for 40 minutes over low heat.
4. Add the grated carrots with cabbage and cook for another ½ hour.
5. Chop the apple and add the cabbageand turn off the stove.
6. Fill the pumpkins with cabbage and ready to enjoy…
